GET ONE OF EACH SIZE GASKET A 8 1/8" AND A 6 1/2"
These gaskets are  an easy and inexpensive way to eliminate the most of the squeeze-by problem but will still allow the air to escape from the sausage as you crank down. Is your press worn  or just really used after a 100 years of sausage making then you will want to get one of these gaskets.
They are made  heavy duty food grade HDPE (high density polyethylene)
fibered gasket that is made to be placed over the sausage that you put into the stuffer so that it eliminates most of the sausage from squeezing or leaking out of the side and most importantly allows you to stuff sausage using JUST THE SMALL PRESS PLATE as a lot of the stuffers do not have the large plate. The gasket is about 1/8" thick and almost unbreakable.
This is a must, if you are into making your own sausage.
The gasket will fit the 6 or 8 qt Enterprise sausage stuffer, or a stuffer with the inside diameter of 8 1/8" and the
6 1/2" will fit the 4 qt stuffer size.
It just makes it more sanitary when the sausage stays inside the press when you crank down on it, keeping the sausage from oozing out the side of the plate. Just fill the stuffer as usual, lay the gasket on top of the sausage and crank down, the gasket acts like a spatula wiping the sides and keeping most of the the sausage from leaking out around the plate. Then when it's all the way down, just uncrank, open the stuffer and with the large center hole it's easy to just pick it up, fill the stuffer again, lay it back on the top of the sausage, close the stuffer and your ready to crank down again.
Washes easily with soap and water so it's ready for the next time you make sausage. Use again and again.
